Cuerpos grasos líquidos, raras veces sólidos (p.ej. la manteca de cacao) por lo común de origen vegetal. Los aceites secantes (p.ej el aceite de linaza) espesan por exposición al aire a diferencia de los aceites no secantes. Son insolubles en agua, y algo solubles en alcohol.
